Meatless Monday: Pinto Beans...mmmmm!


Look at this yummy-ness! And so easy...



It couldn't be more simple to make a whole pot of this 
delicious-ness!

I adapted a recipe from Paula Deen to make these vegan!

1lb dried beans soaked
1 1/2 tsp. chili powder
1 1/2 tsp. dried oregano
1 softball sized onion, chopped
1 1/2 tsp minced garlic
4 cups vegetable stock


Throw it all in the crock pot.
Turn it on High.
5-6 hrs later...enjoy!

I use the leftovers to make refried beans for Taco Night!
Better than anything you can get out of a can!
And sooooo cheap!
