Meatless Monday: Crockpot Gluten Free & Vegan Minestrone Soup.

Ingredients
  • 4 cups water
  • 1 large yellow onion, diced
  • 2 ribs celery, diced
  • 2 medium carrots, peeled and sliced
  • 1 medium potato, peeled and diced
  • 1 cup frozen corn
  • 1 cup frozen green beans
  • 1 can diced tomatoes
  • 1 can tomato paste
  • 1 tsp minced garlic
  • 2 tbsp chili powder
  • 1-2 shakes red pepper flakes ( we like lots more)
  • salt and pepper to taste
  • 1 can red kidney beans, drained and rinsed
  • 1 cup cooked brown rice macaroni
Directions
Add all the ingredients to your crockpot except the cooked macaroni. Cook on low until the fresh veggies are tender. (about 3-4 hrs on low or 2 hrs on high) Add in cooked macaroni just before serving. Serve with crusty bread.
